Jean-Philippe Susilovic
Jean-Philippe Susilovic met Gordon in 1995 when he joined Aubergine as a Chef de Rang and worked with the team in achieving its second Michelin star. He then spent some time in New York at La Panetière, Danube and Daniel's, both two Michelin starred restaurants. In October 2001, he re-joined Gordon as Restaurant Manager for the opening of Verre at the Hilton Dubai Creek and it was at this time that he caught the attention of Marcus Wareing.
When Pétrus moved from St James's to its new site at The Berkeley Hotel, Jean-Philippe joined the team to manage the 80 seater restaurant. He has been instrumental in developing a strong management style ensuring the harmony of both service and cuisine at the highest standard.
