Pan fried foie gras, rhubarb poached with Lapsang tea, quince and hazelnuts 

(Goat’s cheese beignets with seasonal vegetables and a parsley oil dressing)

Scottish scallop, braised sweet onions, Alsace bacon

(Périgord truffle risotto)

Roasted and marinated quail, spring cabbage, Pommery mustard and baked potato 

(Spiced aubergine tortellini, wild garlic pesto, artichokes and fresh tomato curds)
