Sausage and Cheddar Buttermilk Biscuit with Hot Honey Glaze
Ingredients
2 cups all purpose flour, plus more for dusting
2 ½ teaspoons baking powder
½ teaspoon baking soda
1 teaspoon kosher salt
½ cup (1 stick) unsalted butter, frozen
½ pound breakfast sausage, cooked and drained on paper towels
4 ounces sharp cheddar, shredded
2 tablespoons sliced chives
1 cup buttermilk, cold
Hot honey, for serving
Cooking instructions
- Preheat the oven to 400˚F (204˚C). Line a baking sheet with parchment paper.
- Whisk together flour, baking soda, baking powder and salt in a large bowl.
- Using a box grater, grate the frozen butter into the large bowl and toss to combine evenly, coating all the butter pieces in flour.
- Fold in the sausage, cheese and chives. Add the buttermilk and stir to combine into a moist dough. Use your hands to knead the dough together and turn it out onto a lightly floured work surface. Using a rolling pin, roll the dough into a roughly 4x8-inch rectangle and then fold in half, leaving a roughly 4x4-inch square. Repeat this process 3 more times to develop flaky layers. Roll the dough into a 9x9-inch square and use a knife to cut into 16 squares. Transfer the squares to the prepared baking sheet and brush the tops with cream. Bake for 10-15 minutes, until the tops are golden brown.
- Remove from the oven and let cool for 5-10 minutes before drizzling generously with hot honey and serving.
Tip: Make a batch and freeze on a baking sheet after cutting into squares. Simply defrost in the refrigerator overnight to bake off in the morning for hot, fresh biscuits on demand with no effort.
