Gordon's Chorizo Torta from Ramsay Around the World
Ingredients
- 1 Sourdough Roll (or any medium size roll)
- 1 Red Onion, sliced
- 2 Chorizo Links, 1 Chopped into Chunks and 1 Crumbled without casing
- 1 Teaspoon Chili Flakes (or to taste)
- 2 Tablespoon Minced Garlic
- 1 Bunch Cilantro, Chopped
- 1 Ball Queso de Oxaca (Can be substituted for Buffalo Mozzarella with some extra salt on top)
- 1/2 Avocado
- Lime Wedge
- 3 Slices of Romaine Lettuce
- 1 Tablespoon Pickled Onions (You can make ahead by Combining Red Onions, Lime Juice and Salt)
- 1 Tablespoon Pickled Jalapeños (Optional)
- 1 Radish sliced
- 1 Tablespoon Salsa Verde
Cooking instructions
- Heat pan and add tablespoon of oil. Add onions and salt & pepper to season. After a minute, add chorizo. After another minute add red pepper flakes and garlic. Cook till caramelized. Add cilantro towards the end
- Once caramelized, string out cheese and add to mixture. Simmer the pan down until cheese is fully melted into chorizo onion base
- While cheese cooks, slice your bread in half and add avocado to the bottom of your bread. Season with salt and pepper as well as lime juice from lime wedge. Add a few lettuce leaves above avocado.
- Once cheese is melted. Turn gas off and allow mix to cook for 1 minute more.
- Above lettuce add pickled vegetables followed by cheese mixture. Add additional pickled vegetables above cheese mixture as well as radish slices. Drizzle salsa on top of radishes.
- Top with the other slice of bread and enjoy!
