- 1 Green Chili, Sliced with Seeds Kept In
- 1 Roma Tomato, Chopped
- 1 Bunch of Green Onion, Chopped
- 1 Small Bunch of Coriander (Cilantro), Chopped
- 1/4 Cup of Coconut Milk
- Pickled Onions

Cooking instructions
- In a hot pan over medium high heat, add 1 tablespoon of Ghee. Once hot, add onions with 1 teaspoon of Pepper, Turmeric and Chili Powder and 1/2 teaspoon Masala. Season with Salt and cook. After cooking for about 1-2 minutes, add Green chili.
- Once almost caramelized, add Tomato to the mixture and cook until everything is caramelized and no water is in the pan.
- As Tomatoes cook, scramble the Eggs in a bowl. When well mixed add 1 teaspoon of Turmeric, Chili powder and 1/2 teaspoon of Masala.
- Once caramelized mixture is cooked, add the egg mixture to pan and mix together. Cook by taking on and off the heat (in the video Gordon doesn't do this because he lost his heat!).
- As eggs are almost done cooking add a touch of Salt and Coconut Milk and remove from heat. Mix together then top with Coriander and Green Onions and mix it all together.
- Place Roti on plate and top with eggs (If you need a roti recipe you can find it here)
- Garnish with Pickled Onions
